Poblano vs Anaheim

Two mild fresh roasting chiles with a lot of overlap. Poblano (1,000–2,000 SHU) is meatier and richer roasted — the choice for chiles rellenos and body in a chili. Anaheim (500–2,500 SHU) is leaner and a touch milder — great for green chili and when you want chile flavor without much heat. They substitute well for each other.
