Substitutions & tips

Ingredients
2 tbsp butter
1 onion, diced
4 garlic cloves, minced
2 (4 oz) cans diced green chiles
1 tbsp ground cumin
1 tsp dried oregano
1/2 tsp white pepper
5 cups chicken broth
3 cups cauliflower florets
5 cups shredded cooked chicken
1/2 cup sour cream
4 oz cream cheese
Juice of 1 lime, salt to taste

Soften the onion in butter; add garlic, chiles, and spices to bloom.

Add broth and cauliflower; simmer until the cauliflower is very tender, about 15 minutes.

Blend about half the cauliflower into the broth with an immersion blender. This is the bean replacement — blended cauliflower gives the creamy body the beans used to provide, with a fraction of the carbs.

Add the chicken; simmer 10 minutes.

Off the heat, stir in sour cream and cream cheese until smooth, then lime. Salt to taste.
