What is Alabama white sauce?

Unlike the tomato- or vinegar-based barbecue sauces most people know, Alabama white sauce is built on mayonnaise, cut with apple cider vinegar, black and white pepper, and horseradish. It was created at Big Bob Gibson Bar-B-Q in Decatur, Alabama in the 1920s, traditionally for smoked chicken. Its tang and creaminess are exactly what make it work stirred into a chili.

Make your own white sauce

Stir together 1/2 cup mayonnaise, 2 tbsp apple cider vinegar, 1 tbsp prepared horseradish (drained), and 1 tsp each black pepper and white pepper. Taste and add more vinegar for sharpness or horseradish for bite. Keeps refrigerated for up to a week — use 2 tbsp in the chili and save the rest for drizzling at the table.

Serving suggestions

Ladle into wide bowls and finish with a thin drizzle of extra white sauce, chopped fresh parsley, and cracked black pepper. Cornbread or buttermilk biscuits on the side soak up the tangy broth. Pickled jalapeños or pepperoncini add a bright contrast without turning up the heat much.

Melt the butter in a heavy pot over medium heat and cook the onion and garlic until soft and translucent, about 5 minutes — you want them sweet, not browned, so they melt into the background.

Stir in the cumin and white pepper and cook for 1 minute until fragrant. Toasting the spices in fat wakes them up; don't skip this step even though the chili is mild.

Pour in the chicken broth and bring to a gentle simmer, scraping any fond from the bottom of the pot.

Add the shredded chicken and Great Northern beans. Stir to combine and return to a simmer.

Simmer uncovered for about 20 minutes, stirring occasionally, until the broth thickens slightly and the flavors meld.

Take the pot off the heat before stirring in the Alabama white sauce. This matters: the sauce is mayonnaise-based, and if it boils it can break and turn grainy. Off the heat, it melts in smoothly and leaves the chili creamy and tangy.
