Substitutions & tips

Half ground beef and half cubed chuck gives a heartier, more varied texture if you have the time. Masa harina (not cornmeal) is what thickens it authentically. Keep the beans out — it's the whole point of the style.


Ingredients
2 lb ground beef (chili grind) or 1 lb ground beef + 1 lb cubed chuck
1 medium onion, chopped
3 garlic cloves, minced
8 oz tomato sauce
2 cups water
3 tbsp chili powder
2 tsp cumin
2 tsp paprika
1 tsp dried oregano
1 tsp salt
½ tsp cayenne (held to the end, to taste)
3 tbsp masa harina (thickener)
Steps

Brown the beef in a large pot over medium-high, breaking it up as it cooks, then drain the excess fat.

Add the onion and garlic and cook until the onion softens, about 5 minutes.

Stir in the tomato sauce, water, chili powder, cumin, paprika, oregano, and salt — but hold the cayenne for now. Building the flavor before the heat is the Shelby move; it lets you control the burn.

Bring to a boil, then reduce and simmer uncovered 45–60 minutes, stirring occasionally, until the flavors meld.

Stir the masa harina with a little water into a slurry and add it to thicken — this is the Texas trick for body without beans, and it adds a subtle corn flavor.

Simmer 10 minutes more until it thickens to a rich, clingy chili.

Now add the cayenne a little at a time, tasting, until it's exactly as hot as you want.
