4 lbs beef chuck, coarsely ground or hand-cutAmazon ↗

Steps

Toast all dried chiles, soak in hot water 20 minutes, blend smooth

Brown beef in batches in a cast iron pot until very deep brown

Remove beef, sauté onion and garlic 5 minutes

Stir in chile purée and cook 3 minutes

Return beef, add broth, cumin, cayenne, paprika

Bring to a simmer then cook very low for 2.5–3 hours

Season with salt, let rest 10 minutes before serving
