Steps

Brown pork cubes on all sides in oil in a heavy pot

Remove pork and sauté onion and garlic until softened

Sprinkle flour over onion and stir to coat, cook 2 minutes

Add broth and stir until smooth, bring to a simmer

Return pork with all roasted chiles and jalapeño

Add cumin and season with salt

Simmer 1.5–2 hours until pork is tender and sauce thickens
