Ingredients
1.5 lbs boneless chicken thighs
1 lb fresh tomatillos, quartered
2 cans diced green chiles
1 jalapeño, seeded and minced
1 onion, diced
4 garlic cloves
3 cups chicken broth
1 can cannellini beans
1 tsp cumin
1 tsp oregano
Juice of 2 limes
Fresh cilantro
Steps

Sear chicken thighs in a little oil in a pot until golden, then set aside2
Sauté onion, jalapeño, and garlic in same pot until soft3
Add tomatillos, green chiles, broth, cumin, and oregano4
Return chicken to pot, bring to a boil5
Simmer 25 minutes, remove chicken and shred with forks6
Return shredded chicken and add beans, simmer 10 more minutes7
Finish with lime juice and cilantro, adjust seasoning and serveOrder Ingredients
