Ingredients
4 strips thick-cut bacon, sliced
1.5 lbs 80/20 ground beef
1 yellow onion, diced
1 red bell pepper, diced
4 garlic cloves, minced
28 oz fire-roasted crushed tomatoes
1 can kidney beans
1 can black beans
2 tbsp chili powder
1 tsp cumin
1 tsp smoked paprika
1/2 tsp cayenne
Beef broth as needed
Steps

Cook the sliced bacon in a large pot over medium heat until crispy, then remove it with a slotted spoon — you want that rendered fat in the pot and the crisp bacon saved for the finish.

Brown the ground beef in the bacon fat and drain the excess.

Add the onion and bell pepper and sauté 5 minutes until soft.

Add the garlic and all the spices and cook 1 minute until fragrant.

Pour in the fire-roasted crushed tomatoes and stir in the beef and about half the bacon.

Add a splash of broth if it's too thick and bring to a simmer.

Stir in the beans and the rest of the bacon and simmer 30–45 minutes. Serve with toppings.
