This is chili and cornbread's best idea: bake them together in one dish so the cornbread steams over the bubbling chili and turns custardy where the two meet. Swap in ground turkey, or use black beans for kidney. From-scratch cornbread batter works if you'd rather skip the box.

1.5 lbs ground beef
1 can crushed tomatoes
2 cans kidney beans
2 tbsp chili powder
1 tsp cumin

1 box cornbread mix
1 egg
1/3 cup milk
1 jalapeño, minced
1 cup shredded sharp cheddar

Preheat the oven to 400°F.

Brown the beef, drain the fat, then add the crushed tomatoes, kidney beans, and spices. Draining here matters — extra grease would keep the cornbread from setting on top.

Simmer the chili 10 minutes until slightly thickened. A too-loose chili will make the cornbread soggy rather than custardy.

Pour the chili into a large baking dish.

Mix the cornbread batter with the egg, milk, and minced jalapeño.

Pour the batter over the chili and spread it evenly to the edges so it seals the top.

Scatter the cheddar over the batter and bake 25 minutes, until the cornbread is golden and set in the center. The steam from the chili puffs the underside into that signature custardy layer.
