2 lbs ground elk
8 oz smoked pork sausage, diced
28 oz crushed tomatoes
2 cans kidney beans
1 large onion
4 garlic cloves
3 tbsp chili powder
2 tsp cumin
1 tsp cayenne
1 cup beef broth

Brown the ground elk and diced sausage together in a Dutch oven. Starting them together lets the sausage fat immediately begin basting the lean elk.

Drain any excess fat, then add the onion and garlic.

Cook 5 minutes until softened, then add all the spices to bloom in the fat.

Pour in the crushed tomatoes and beef broth, scraping up the browned bits from the bottom.

Bring to a simmer, cover, and cook 1.5 hours — the long simmer is what turns lean elk tender instead of chewy.

Add the kidney beans and cook 30 minutes more, uncovered, until thick.
