28 oz fire-roasted diced tomatoesAmazon ↗

Steps

Heat oil in a large pot, sauté onion, carrot, and celery until soft, about 8 minutes

Add garlic, chili powder, cumin, and smoked paprika, cook 1 minute

Pour in fire-roasted tomatoes and vegetable broth

Add lentils, bring to a boil then reduce to a simmer

Cook 30 minutes until lentils are tender
6
Add both cans of beans and simmer 10 more minutes
7
Finish with lime juice, cilantro, and taste for seasoning
