Ingredients
1 cup green lentils, rinsed
1 can black beans
1 can kidney beans
28 oz fire-roasted diced tomatoes
1 large onion, diced
4 garlic cloves
2 carrots, diced
2 celery stalks, diced
3 cups vegetable broth
2 tbsp chili powder
1 tsp cumin
1 tsp smoked paprika
Lime and cilantro to finish

Heat oil in a large pot and sauté the onion, carrot, and celery until soft, about 8 minutes — this soffritto base is where the savory depth starts, so don't rush it.
