Ingredients
1 cup green lentils, rinsed
1 can black beans
1 can kidney beans
28 oz fire-roasted diced tomatoes
1 large onion, diced
4 garlic cloves
2 carrots, diced
2 celery stalks, diced
3 cups vegetable broth
2 tbsp chili powder
1 tsp cumin
1 tsp smoked paprika
Lime and cilantro to finish
Steps

Heat oil in a large pot, sauté onion, carrot, and celery until soft, about 8 minutes2
Add garlic, chili powder, cumin, and smoked paprika, cook 1 minute3
Pour in fire-roasted tomatoes and vegetable broth4
Add lentils, bring to a boil then reduce to a simmer5
Cook 30 minutes until lentils are tender6
Add both cans of beans and simmer 10 more minutes7
