Ingredients
3 lbs pork shoulder
2 tbsp Memphis dry rub (paprika, garlic, onion, brown sugar, cayenne)
28 oz crushed tomatoes
2 cans pinto beans
1 cup chicken broth
2 tbsp apple cider vinegar
1 tbsp molasses
2 tsp chili powder
1 tsp cumin
1 large onion, diced

Rub the pork shoulder generously all over with the Memphis dry rub and let it sit 30 minutes — this rest lets the salt and spices start penetrating the meat.

Sear the pork in a Dutch oven on all sides until deeply browned, building a flavorful crust.

Remove the pork and sauté the onion in the remaining fat until soft.

Return the pork and add the crushed tomatoes, broth, vinegar, and molasses.

Cover and braise at 325°F for 3 hours, until the pork falls apart.

Remove the pork and shred it with two forks.
