2 lbs boneless chicken thighsAmazon ↗

Steps

Season chicken thighs with salt and pepper

Brown chicken thighs in a little oil in a large pot, 3 minutes per side

Remove chicken and sauté onion and garlic until soft

Add chili powder, smoked paprika, and cumin
5
Pour in crushed tomatoes and chicken broth
6
Return chicken, bring to a simmer, cover and cook 30 minutes
7
Remove chicken, shred with forks, return to pot with beans and simmer 10 more minutes
