Steps

Toast all dried chiles dry in a skillet until fragrant and pliable

Soak chiles in 2 cups hot water 20 minutes until fully softened

Blend softened chiles with soaking liquid, soy sauce, and garlic until very smooth

Brown brisket cubes in a large Dutch oven in batches — deep brown on all sides

Sauté onion in remaining fat until deeply caramelized, about 15 minutes

Add chile paste and cook 5 minutes, stirring constantly

Add broth, cumin, and oregano, return brisket
8
Simmer very low for 2.5 hours

Stir in cold brew coffee and simmer 1 more hour
10
Add bourbon in the last 10 minutes

Rest 15 minutes before serving — best the next day
