Turkey & Green Chile Chili

Turkey & Green Chile Chili

This is the chili to make when you want something bright, light, and genuinely fast — on the table in an hour, and lean enough that you'll go back for a second bowl without a second thought. Ground turkey keeps it mild and clean-tasting, while a double hit of green chiles brings a gentle warmth and that unmistakable roasted-chile flavor. Finished with a squeeze of lime and a handful of cilantro, it lands somewhere between a chili and a green-chile stew — fresh, comforting, and a smart pick for anyone keeping an eye on what's in the bowl. Proof that "lighter" doesn't have to mean "less."

Serving suggestions

Lime and cilantro aren't optional here — they lift the whole bowl.

Substitutions & tips

Avocado, a dollop of Greek yogurt, or a little crumbled cotija all suit it. Ground chicken subs directly for turkey. For more heat, add a diced jalapeño or a hotter can of green chiles. Keep the guidance flexible and let people build their own bowls.

Ingredients
1.5 lbs ground turkey
2 cans diced green chiles
1 large onion, diced
6 garlic cloves, minced
2 cups chicken broth
1 can white beans
1 tsp cumin
1 tsp chili powder
1/2 tsp garlic powder
Salt and pepper
Lime and cilantro to serve
Steps
1
Brown the ground turkey in a large pot with a little oil over medium-high, breaking it up — turkey is lean, so keep it moving so it doesn't dry out.
2
Remove the turkey and cook the onion and garlic in the same pot until soft.
3
Return the turkey and add the green chiles, cumin, and chili powder — the two cans of green chiles are the heart of this one, so let them get acquainted with the meat.
4
Pour in the chicken broth and bring to a simmer.
5
Cook 25 minutes until the flavors develop.
6
Add the white beans and simmer 15 minutes more.
7
Squeeze in fresh lime juice and garnish with cilantro before serving — that bright finish is what makes it taste fresh rather than heavy.
