1.5 lbs boneless chicken thighsAmazon ↗
1 lb fresh tomatillos, quarteredAmazon ↗
2 cans diced green chilesAmazon ↗
1 jalapeño, seeded and mincedAmazon ↗
1 onion, dicedAmazon ↗
4 garlic clovesAmazon ↗
3 cups chicken brothAmazon ↗
1 can cannellini beansAmazon ↗
1 tsp cuminAmazon ↗

Steps

Sear chicken thighs in a little oil in a pot until golden, then set aside

Sauté onion, jalapeño, and garlic in same pot until soft

Add tomatillos, green chiles, broth, cumin, and oregano
4
Return chicken to pot, bring to a boil

Simmer 25 minutes, remove chicken and shred with forks
6
Return shredded chicken and add beans, simmer 10 more minutes
7
Finish with lime juice and cilantro, adjust seasoning and serve
