Substitutions & tips

Use wild salmon if you can — it holds together better than farmed. Add the dill and lemon at the very end so they stay fresh. Halibut or cod work in salmon's place. Best eaten right away.


Ingredients
1.5 lbs wild salmon fillet, cubed
2 cans white beans
28 oz crushed tomatoes
1 large onion
4 garlic cloves
1 tbsp fresh dill, chopped
1 tsp cumin
1/2 tsp smoked paprika
Juice of 1 lemon
Salt and white pepper
Steps

Sauté the onion and garlic in olive oil until soft.

Add the cumin and smoked paprika and cook 1 minute to bloom.

Pour in the crushed tomatoes and simmer 15 minutes.

Add the white beans and simmer 5 minutes more.

Season the salmon cubes with salt and white pepper.

Add the salmon to the pot and simmer gently 8 minutes, just until it flakes — poach it slowly and stop the moment it's done, or it'll dry out.

Stir in the fresh dill and lemon juice off the heat and serve immediately, while the salmon's tender and the dill's bright.
